It is characterized by a fine, partially supple consistency without or with only a small amount of holes. Its taste is pure, with smoked cheese on beech wood it is slightly smoked. The addition of the enzyme lactase in the production process makes it particularly suitable for people suffering from lactose intolerance. Lactose content <0.01g / 100g.
